Love your eggnog but not in love with the saturated fat and calories?

 

 

 

 

Medjool Eggnog


Impress yourself and your guests with homemade healthy Medjool Eggnog. Unlike traditional eggnog, this eggnog is rich in nutrition and low in saturated fat!

 

Ingredients

4 cups of almond milk
5 medjool dates pitted (soaked for 1 hour)

1/2 of a small avocado (use whole avocado for thicker eggnog)
1/2 cup macadamia nuts (soaked for 1 hour)
1/4 cup maple syrup (or sweeten to preferred taste)
2 tsp nutmeg
2 tsp cinnamon

1 tsp vanilla extract

dash of sea salt

 

Directions

Strain the water from the macadamia nuts and dates, and blend all ingredients on high for about 1-2 minutes until very smooth. If needed, add more maple syrup for extra sweetness.

Depending on your blender, it may take several minutes to get your eggnog smooth.
